Billy Hicks in Georgetown was a spontaneous stop for brunch while I was out doing some shopping. And yo, this food was really good. I've never been to this spot before, and their test was my iced chai latte. I love chai, but so many places screw it up by putting way too much milk in it. Starbucks, I'm looking at you tricked when I say this, but Billy Hicks nailed it with a perfect balance of spices to make a perfect chai. Now let's talk about this food. The short rib grilled cheese with Parmesan fries. I need to know who was cooking in the back because you did the damn thing. That meat was tender, the cheddar melted perfectly within the sandwich and then they gave you the au jus to dip it in. Hell to the yeah. To the chef, if you got any enemies, let me know. I will slap them for you because any enemy of yours is my enemy too. The dulce de leche french toast thing came out. Another hit. That kitchen was going hard in the paint on a Tuesday. This french toast was so good it didn't even need serve. We added the breakfast potatoes which were another hit and I can't wait to go back to this spot and try more of the menu.
