If you only try one thing in Guanajuato, Mexico, this is it. This is a guacamaya and you can find it at Mercado Hidalgo. This amazing sandwich is loaded with crispy chicharron and juicy carnitas. Then it's topped with fresh avocado and lime juice and a generous heaping of spicy salsa. Look at this thing.
