Kiape wood, a local hardwood, has a similar aroma to mesquite. We use two rums, an 8-year and a 12-year from a distillery called El Dorado. The 8-year we infuse is raisins, so we add a flavor of raisins. We have coconut water, agave, vanilla, honey, some fresh lime juice, and a classic Mai Tai ingredient called Borgia, which is an almond series. So the idea is the smoke should kind of provide an aroma that changes.
