Displaying open, doing a little surgery on this guy here. What I'm doing right now is kind of cross-hatching it to make it easier to serve for you better. So first thing that's going to go on here is a tahini yogurt sauce. It has a good deal of roasted garlic in it. And then next I got a spice blend of Escalade powder, smoked paprika and sumac salt. I'm gonna get pretty heavy on this so don't be worried. Then I got a little marissa oil. Kinda add some smokey heat to it. A little greenery for some freshness here so there's some chad. A little Italian parsley. And then lastly, a little squeeze of lemon just to kind of add some acidity to it. And the idea there is to kind of scoop that out onto the lay-baked brew sourdough.
