This is the foie-bras creme de lait. We're going to take a little of the brandy of that and do the foie-bras and we whip it into the creme de lait. And we bring it out with the cotton candy on top. It's simple, it's kind of like some places you like to put the sugar spring on top to make it look like the crust. We like to use our house-made cotton candy. And then the macerated berries on the side, add a nice little citrus and a little touch to it to finish off the dish.
