Big news for Southwest Las Vegas food lovers. The talented owner, chef behind the downtown favorite. Carson Kitchen has officially expanded to the Southwest with a brand new modern steakhouse. Butcher and Thief. We started with cocktails and they definitely set the tone. Gin makes me sing, refreshing, balanced, and not overly sweet. Easy to drink but still layered. Nice pair, fruit forward with a smooth finish. For food, we went all in. Steelhead Trout. Beautifully cooked, flaky, and tender. The only critique of the night. The sauce was a bit salty and slightly overwhelmed. Right by, this is what they do best. Rich, juicy, and cooked just right. You can tell the quality of the meat. Spinach side, flavorful, well-seasoned, and a great complement to the steak. Overall, everything tasted great, cocktails were thoughtfully crafted, and the food clearly reflects a chef-driven vision. It feels polished yet approachable.
