So I'll go through each step with you guys so you know what I'm doing and what's incorporated. A little warning about the bowl. The bowl is about 350 plus and it will really pop throughout. I'm just going to be very careful when handling the bowl. Okay. Awesome. So here on top I have our nori, which is our sieving. Here on the side I have our usual kosho paste that I'm spreading alongside of the fish just to get the flavor. Naturally the fish has a buttery creaminess to it. This is just to give it that pop of citrus and peppercorn. And I'm going to start searing the fish alongside. ... I'm going to fill this up for you. It still will be cooking at the bottom, so you will have like a crunchy. ... I think I may have at a Korean restaurant. Usually they are Korean restaurants. I think it's a great way to compare and couture since they're very similar. And Chef Morimoto is the only person who does this version. So I think it's really awesome. Excellent.
