I just found the tastiest pad Thai in Charlotte. Mem's Thai Kitchen is located out of City Kitchen on Thrift Road. And if you're not familiar, it's a hub of local chefs and restaurants all under one roof. I tried the Thai iced tea, which was as tasty as it was pretty. Mem's Thai is serving up some delicious and authentic Thai dishes. The chicken spring roll was crispy and packed with seasoned chicken. I love how light and fluffy the shrimp fried rice was. And I couldn't get enough of the chicken curry puffs, which were like an empanada. filled with chicken, potato, and Thai curry spices. But y'all, since moving to the area, I've been searching for a pad thai like this. It's so delicious. I also tried the shrimp spring roll, which was crispy and fresh.
