Here's where you could find tenderloin tortas, or tortas del lomo, estilo Guadalajara. This is Guanatos in San Jose, California. That is only half of the torta. They add mayonnaise, top it with cheese, and put it in the cheese melter to get it nice and toasted. The meat then gets fried and added to the torta. Just look at those big pieces of lomo. Then comes all the good stuff. All the veggies, jalapeños, and avocado. They double wrap it nice and tight so nothing falls off. This is bomb. Super warm.
