I went to the famous La Perseverancia market without much of a plan. I walked around and sure enough, something got my attention and I pointed and ordered. I was brought abroad and thought that I'd ordered wrong, but it turned out to be the intro to the main event, a whole fish that was placed in front of me. I was so thrown off that I couldn't prepare myself for that insane first bite, but that flavor, texture, and comfort was perfection.
